Recipe: Rainbow Pasta Salad

Rainbow Pasta Salad

1 bag or box of Rainbow Rotini Noodles (usually 12-16 oz. pkg.)

1 head of medium sized Broccoli, cut into small pieces (good source of carotene)

1/2 cup Olives, sliced

2 Tomatoes, chopped (good source of carotene)

1/2 medium-sized Round Onion, thinly sliced

1 medium-sized Cucumber, diced (good source of carotene)

1 8 oz. bottle of Low Fat Italian Dressing

Boil noodles according to package directions, set aside. Microwave broccoli for 30 seconds. Put all ingredients, including the dressing, in a mixing bowl and mix well. Cover and refrigerate until chilled. Toss before serving. Serves 12 people.
